Swiss culinary tradition
The initial origins of the Tirggel can be traced back to monastic bakeries in the 15th century. The fine Zurich honey biscuits are "scorched" i.e. briefly baked with strong top heat. This accentuates the fine lines of the imprinted images on the top while those on the bottom remain elegantly pale.
